Why plant-based milks? 

A common term for non-dairy milks is “plant-based milks.” For many years, soy and almond milks have been available, but options today have expanded to include oat, pea, cashew, hempseed, hazelnut, walnut and even banana milk. There is a dizzying array of milks to choose from, and more will likely be appearing.

The rise of almond milk 

Almond milk has risen to the top of plant-based milks in terms of popularity. In 2019, sales of almond milk reached $1.3 billion, far surpassing sales of soymilk, which reached just $194 million during that time period. 

The use of almond milk dates way back to the 13th century, when it was first referenced in Middle Eastern cookbooks. One reason for the use of almond milk is that nuts are acceptable to consume during fasting times, such is silk vanilla almond milk good for you during Ramadan and Lent. Almond milk was first mentioned in English literature in the late 1300s.  

Almond milk is made by soaking and grinding whole or blanched almonds with water. The resulting milky white liquid is then strained, removing all of the solids. Commercially made almond milk is homogenized and pasteurized for stability and shelf life. Sweeteners, sodium, protein, vitamins and thickening agents, such as carrageenan, may be added, as well. And like cow’s milk, almond milk can go bad, so it’s important to check out the “use by” date on the package and use the milk within seven days after opening. If you drink almond milk or are considering trying it, you might be wondering if it’s a healthy choice. Here are some of the benefits that almond milk can provide: 

  • It’s low in calories (at least, the unsweetened variety is), making it a good choice for those who are aiming to lose or maintain their weight.

Before you head to the supermarket to stock up on almond milk, it’s important to evaluate the various types, as not all are healthy choices. Let’s take a look. 

One cup of unsweetened and unsweetened vanilla almond milk contains: 

  • 30 calories 
  • 1 gram of carbohydrate 
  • 0 grams of sugar 
  • Less than 0.7 grams of fiber 
  • 1 gram of protein 
  • 2.5 grams of fat 
  • 170 milligrams of sodium 

One cup of sweetened almond milk contains: 

  • 90 calories 
  • 16 grams of carbohydrate 
  • 14 grams of sugar 
  • 0 grams of fiber 
  • 1 gram of protein 
  • 2.5 grams of fat 
  • 140 milligrams of sodium 

One cup of sweetened chocolate almond milk contains: 

  • 100 calories 
  • 21 grams of carbohydrate 
  • 19 grams of sugar 
  • 1 gram of fiber 
  • 1 gram of protein 
  • 2.5 grams of fat 
  • 150 milligrams of sodium 

Obviously, sweetened regular and chocolate almond milk, which are often sweetened with cane sugar, contain more calories and carbohydrate than the unsweetened variety. Also, unsweetened almond milk has a low glycemic index of 25, which means that it’s less likely to cause rapid spikes in glucose levels.  

A drawback of almond milk (and many other nut milks, as well) is the low protein content. At just one gram of protein per one-cup serving, almond milk is not a good source of protein (compare that with cow’s milk, which contains 8 grams of protein in one cup). However, some companies are now adding plant protein to almond milk. An example is Orgain Organic Protein Almondmilk, which contains 10 grams of protein (from peas) per one-cup serving.  

Downsides of almond milk 

As mentioned above, not all almond milk varieties are created equally in terms of nutrient profile. In addition, some people are uncomfortable with the added ingredients that some brands contain. A good example is carrageenan. Carrageenan is a controversial food additive that is extracted from red seaweed and FDA-approved for use by food manufacturers as a thickening agent. Some scientists are concerned that carrageenan may lead to inflammation, certain types of bowel disorders and even colon cancer; however, there are conflicting views and insufficient research on this ingredient. 

People who are allergic to almonds should obviously not drink almond milk. But people with other types of tree nut allergies should shy away from drinking almond milk, as well. The American College of Allergy, Asthma and Immunology state that tree nut allergies are most likely to cause anaphylaxis, a severe, potentially life-threatening allergic reaction, compared to other types of allergies. 

Infants should not be given almond milk due to the low protein content; also, infants can have an allergic reaction to nut milks. Speak to your pediatrician about the use of almond and other nut milks for infants and toddlers. 

Finally, there are environmental concerns linked to almond milk. According to an article in Business Insider, it takes one gallon of water to grow one almond. California’s Central Valley is where the U.S. gets pretty much all of its almonds, as well as tomatoes, lemons, artichokes and pistachios. With drought and fires ravaging California, many critics point out that supporting the use of almond milk as a healthy alternative to cow’s milk doesn’t justify the amount of water needed to grow almonds. There are also concerns with the amount of pesticides used on almonds that can contaminate the drinking water supply and kill off bees. 

Almond milkdiabetes and other considerations 

If you are pondering switching to almond milk for drinking or use in cooking or baking to help you manage your diabetes, there certainly are some considerations to keep in mind. Here are some tips: 

  • Unsweetened almond milk is your best bet when it comes to calories and carbs. However, don’t use unsweetened almond milk to treat low blood sugar. Stick with sources of fast-acting carbs, like glucose tablets or juice. 
  • Keep in mind that almond milk, in general, is low in protein, so unless you choose a protein-fortified brand, make sure you’re getting adequate protein from other sources. Always read the Nutrition Facts Label for any brand of almond milk. 
  • Choose an almond milk that has been fortified with calcium, vitamin D and vitamin A.  
  • For more of a nutrition boost, go for a handful of almonds rather than a glass of almond milk: Almonds have more protein, fiber and certain vitamins and minerals. 
  • Talk with your doctor or dietitian about carrageenan if you have digestive issues, such as irritable bowel syndrome or Crohn’s disease. If you are worried about carrageenan or feel that it is contributing to symptoms, steer clear of almond milk brands that contain this ingredient. 
  • You can cook and bake with almond milk, although the flavor and consistency of your food items may be different compared with using cow’s milk. You might also need to reduce the baking time of foods made with almond milk. And if you are using this milk in a recipe that needs to thicken, you may need to add flour, as almond milk is thinner than cow’s milk. Finally, be careful of using almond milk in recipes with acidic ingredients, such as lemons or tomatoes, as these can curdle the milk. 
  • Freezing almond milk may change its taste, color and texture and some almond milk manufacturers will discourage you from doing so. If you do freeze it, stir or shake the almond milk before using it.

Almond Milk: Nutrition & Benefits

At its most basic, almond milk is a drink made from ground almonds and water. It is a popular plant-based alternative to cow’s milk. 

“Almond milk has been around for several years,” said Jenny Heap, a registered dietician with the Almond Board of California. In fact, almond milk has existed since at least the Middle Ages, when noble households favored it over animal milk, according to "Food in Medieval Times" (Greenwood, 2004), by Melitta Weiss Adamson. But, said Heap, almond milk “has gained particular momentum in the past three to five years, appearing now in the cold dairy case as well as in ice cream and frozen novelty products.” 

In 2014, almond milk surpassed soymilk as the most popular non-animal milk product, according to the Boston Globe. 

Is almond milk dairy?

It may be called milk and found in the dairy aisle, but almond milk is not dairy. It is “a tasty dairy-free, soy-free lactose-free alternative,” said Heap.

According to Heap, almond milk is made by blending almonds with water and straining them. Sweeteners or salts may then be added. Commercial almond milk manufacturers also usually add vitamins and other nutrient fortifications, as well as thickening agents like carrageenan, a seaweed derivative commonly used as a beverage stabilizer. 

It is easy to make almond milk yourself, not to mention cheaper. Heap recommended the following recipe:

  • Soak 1 cup of almonds uncovered in water for one-two days.
  • Drain and discard the soaking water.
  • Rinse the almonds.
  • Blend them on high with 2 cups of fresh water.
  • Strain well using cheesecloth.
  • Add a little vanilla, sweetener or cinnamon. 

How long does almond milk last?

Both commercial and homemade almond milk can go bad. Commercial almond milk has a use-by date on its packaging and should be used within seven days after opening, according to the Almond Breeze brand website. Heap recommends using homemade almond milk within two days. 

Nutritional profile: almond milk vs. almonds

Almond milk contains some of the same benefits as super-healthy almonds, like vitamin E and riboflavin, but in general, almond milk’s nutrient levels are vastly lower than almonds&rsquo. When it comes to almonds, Heap said, “Every one-ounce serving (about 23 almonds) provides 6 grams of protein and 4 grams of fiber, plus vitamin E (35 percent DV [daily value]), magnesium (20 percent DV), riboflavin (20 percent DV), calcium (8 percent DV) and potassium (6 percent DV).” 

It is unclear exactly how many almonds go into a quart of almond milk, as it depends on the brand or, if it’s homemade, the recipe. But it’s unquestionably a small amount. A carton of the British brand Alpro’s almond milk is only 2 percent almonds. The rest of it is water and added vitamins, minerals and thickening agents. And according to an article by Business Insider, commercial almond milk recipes are pretty similar from brand to brand. The ingredient list on most commercial brands lists almonds as the second or third ingredient, after water and sweeteners, according to the Los Angeles Times. 

Therefore, when it comes to eating whole almonds or drinking almond milk, The George Mateljan Foundation’s World’s Healthiest Foods website states that eating almonds provides more nutritional benefits. A comparison of the U.S. Department of Agriculture's nutrient value charts shows that one 8-ounce glass of almond milk contains only 1 gram of protein, compared to 6 grams in a serving of almonds. It also has only 1 gram of fiber, compared to 4 grams in a serving of almonds. Almond milk has 17 grams of magnesium vs. 77 in almonds and 1.5 grams of heart-healthy monounsaturated fats vs. almost 9 in almonds. 

Almond milk does contain much larger amounts of calcium and vitamins A and D than whole almonds, but that is because the manufacturers fortify it with those nutrients, according to World’s Healthiest Foods. Additionally, the vitamin E found in almond milk is added; the vitamin E from raw almonds doesn’t make its way into almond milk. 

If you make your own almond milk, these nutrient values will likely go up. Heap recommends using one cup of almonds per two cups of water, which would yield milk with a much higher nut percentage than the commercially available options. 

Nutritional profile: almond milk vs. cow’s milk

It’s no wonder that commercial almond milk has vitamins A and D while raw almonds don’t — manufacturers are trying to make almond milk as cow-like as possible. After all, most people use it as a dairy substitute. So how does milk made from almonds and water stack up against milk from an udder?

According to the USDA, while almond milk has only 1 gram of protein per cup, cow’s milk has 8. If you buy calcium-fortified almond milk, the calcium levels will likely match or surpass cow’s milk. That is not the case if you make it at home. The levels of vitamins A, D, E and B12 in fortified almond milk also significantly surpass those in non-fortified cow’s milk. On the other hand, cow’s milk has more than double the amount of phosphorus and potassium than almond milk, while almond milk has slightly more sodium. 

One notable difference is that while almond milk is free of cholesterol and saturated fats, cow’s milk contains these to different degrees depending on the type of milk. The Washington Postreported that the fat in almond milk is all healthy, which cannot be said of cow’s milk unless it is skim and has no fat. Also, almond milk generally has fewer calories than cow’s milk, though again that depends on if you’re drinking heavily sweetened almond milk or skim cow’s milk.

Benefits of almond milk

Depending on the vitamin and mineral fortifications your almond milk includes, there may be other benefits from nutrients like calcium, protein, and vitamins A, D, E and B12. 

Non-dairy/ lactose-free

Since almond milk is dairy-free, it can be a good option for those with dairy or lactose intolerances looking for something to put on their cereal. According to a recent article on plant-based milk substitutes published in Critical Reviews in Food Science and Nutrition, 75 percent of the world’s population suffers from lactose intolerance and may benefit from products like almond milk. It can also be a good option for vegans and vegetarians. The article cautions, however, that consumers must remain aware that dairy alternatives usually do not contain anywhere close to the same amounts of calcium and protein as cow’s milk. 


Not only is almond-milk cholesterol free, according to the American Heart Association, monounsaturated fats, such as those found in almond milk, are good for your heart if you substitute them for saturated fats, such as those found in cow’s milk. In a 1999 review published in Current Atherosclerosis Reports, researchers looked at the Nurses’ Health Study and estimated that substituting nuts for saturated fats resulted in a 45 percent estimated reduced risk of heart disease. 


Almond milk is popular with dieters. Heap said, “It’s really had strong appeal to calorie-watchers since many varieties have just 30-60 calories per cup.” A study published in 2003 in the International Journal of Obesity and Related Metabolic Disorders suggested that combining almonds with a low-calorie, high-monounsaturated fat diet led to more weight loss than did a low-calorie diet with lots of complex carbohydrates.


Some of the riboflavin in almonds makes it into almond milk. Riboflavin is also known as vitamin B2, and it helps produce red blood cells and release energy from the carbohydrates you eat, according to the National Institutes of Health. 

Cancer prevention

In 2011, a study published in Nutrition and Cancer suggested that almond milk might be helpful in suppressing prostate cancer cells. The study compared the growth of prostate and breast cancer cells in samples that digested organic cow’s, soy and almond milk. Unlike cow’s milk, which “stimulated” the growth of prostate cancer cells, almond milk suppressed the growth of prostate cancer cells by more than 30 percent. It had no affect on breast cancer cells, though soymilk encouraged their growth. 

Who should not drink almond milk?


As almond milk rises in popularity, more and more parents are giving it to their infants. Studies have shown that this can be quite dangerous. In a 2014 study in the French journal Archives of Pediatrics, infants who were given plant-based milks between ages 4 and 14 months showed signs of protein-calorie malnutrition, edema, hypoalbuminemia (low blood levels of albumin, an important protein), iron deficiency anemia, is silk vanilla almond milk good for you growth rate, vitamin D deficiencies and several other problems. The article recommends statutory measures forbidding plant-based milks for young infants. 

Tree nut allergy-sufferers

Almond milk may not contain a lot of almonds, but it’s enough to set off serious allergy attacks for those with almond allergies. An almond allergy is typically grouped with a tree nut allergy (including cashews, walnuts, Brazil nuts and others), and is usually severe. According to the American College of Allergy, Asthma and Immunology, tree nut allergies are among the allergies most likely to cause anaphylaxis, a severe allergic reaction. Symptoms of an almond allergy include abdominal pain, diarrhea, difficulty swallowing, nasal congestion or a runny nose, nausea, shortness of breath and itching. 

Risks of drinking almond milk

Some brands of almond milk contain carrageenan, a common and controversial thickener derived from seaweed. It’s often used for texture in things like ice cream. According to one review published in Environmental Health Perspectives, several studies have linked it to increased inflammation as well as inflammatory bowel disease and colorectal malignancy. If you’re concerned about carrageenan, check the labels on your almond milk to select a brand that does not include it. 

Given almond milk’s low protein content, and, if unfortified, low calcium content, those substituting almond milk for dairy should be careful to get protein and calcium from other sources.

Also a brand from Aldi, this is NOT organic. Aldi reports that this brand contains about 2% almonds.

Ingredients (unsweetened): Reverse osmosis filtered water, organic almonds.

Three Trees is thicker without the use of thickeners because it contains a lot more almonds than many mainstream brands. Because it contains more almonds, their almond milk is higher in calories than other unsweetened almond milks. Three Trees contains 20% almonds.

Three Trees is in over 400 stores nationwide (USA).

Notable Mention

Beber – This boutique almondmilk is made in California using local ingredients. Just two ingredients – filtered water and organic almonds. Only available in smaller outlets in California.

Starbucks Almond Milk

Starbucks offer an Almond Milk (the call it almondmilk)that is their own formulation. This is not a separate product as such, but can be chosen in some stores instead of dairy milk. It has less sugar per serving than any other milk product in their stores.

Ingredients: almond milk (filtered water, almonds), sugar, tricalcium phosphate, sunflower lecithin, sea salt, xanthan gum, guar gum, vitamin A palmitate, and vitamin D2.

Per serving: 60 calories, 4 grams fat, 110 mg sodium, 5 grams carbohydrate, 1 gram fiber, 3 grams sugar, and 2 grams of protein

  • Almond Percentage: 3%.
  • Carrageenan-free

Almond Milk Nutrition Issues

A texturizing additive derived from seaweed. Regarded as safe by the FDA, although some people report gastro-intestinal issues (see more). It is used predominantly in dairy and meat products, but does sometimes turn up in Almond Milk. (Here’s a large review, if you’re really concerned.)

Different kinds of thickeners and gums can be found in non-dairy milks. Chris Kesser sums this up well “gums can be problematic for those with digestive issues simply because they’re mostly indigestible, but it’s very unlikely any of them will actually cause harm.”

Vitamin A Palmitate

Which Almond Milk is Best?

This comes down to your preference for price, taste, mouthfeel, and nutrition. In terms of nutrition, aim is silk vanilla almond milk good for you unsweetened varieties. If you can’t handle the blandness, then try an unsweetened vanilla.

For the best nutrition, try Elmhurst, ThreeTrees, or Malk (if available near you). For a cheaper milk, try Silk.

For something different, get frozen almondmilk concentrate delivered from Good Mylk Co (order via Southwest airlines visa signature card login you’re in Australia, the Australia’s Own Organic or Pure Harvest is a great product.

Beware the Packaging

Most beverages of this kind are shipped in Tetrapak cartons. Despite the considerable info on sustainability on their site, Tetrapak recycling is not straightforward. There are two issues:

  1. 1. Many local authorities do not accept these cartons for recycling (so they go to landfill).
  2. 2. Where recycling is accepted – it is a complex affair. Tetrapak are clever packages allowing liquids to sit on shelves for a long time, are lightweight, and can be packed in bulk efficiently. However they are made up of paperboard, polyethylene (plastic), and 5% aluminium. Recycling is expensive and complex (and in reality can only be downcycled).

Other non-US Brands

  • Almo Milk (Australia) – A boutique milk with just 5 ingredients: Filtered water, 5% almonds, calcium, non GM xanthan, sea salt.
  • Almond Fresh (Canadian) – similar sugar content, contains carrageenan.
  • Vitasoy – This Hong Kong based company markets to NZ and Australia. Almond milks contain 3.8% almonds and contain no carrageenan.
  • So Good (NZ & Australia) – Contains carrageenan. Sweetened and unsweetened varieties. Almond Percentage: 2.5%
  • Australia’s Own Organic(Australia) – Certified organic, no carrageenan, lightly sweetened with Agave Syrup. Almond Percentage: 3.
  • Macro Organic Almond Milk (Australia / NZ) – A store brand (Woolworths/Countdown) with 4% almonds.
  • Pure Harvest (Australia) – Certified organic, uses Rice Syrup to sweeten. Claim 7% almond content (activated almonds).
  • Alpro Almond Milk (UK) – No carrageenan. Slightly sweeter than other brands.
  • Earth’s Own So Fresh (Canada) – No carrageenan, but uses Gellan Gum, Locust Bean Gum, and Soy Lecithin

Almond Pasteurization

Many nutrition labels list almonds as raw. This is not strictly true as (from 2007 onwards) all almonds grown in the US must be pasteurized (after capital one bank business login outbreaks of Salmonella during the early 2000s). This process is either done by steam treating the almonds, or by using the fumigant Propylene Oxide is silk vanilla almond milk good for you (see more). We’ve made Almond milk at home. I found the taste reflected the quality of the almonds. Sometimes I find that almonds I buy are old, and have that slightly… hmmm… rancid undertone?

I recommend using a nut milk bag to strain the almonds.

When You Drink Almond Milk Every Day, This Is What Happens To Your Body

Switching to almond milk might be good for your health, but it's less friendly for the health of the planet. Almonds require a huge amount of water to grow. According to Datawrapper, a single almond needs 5 liters of water to grow. Since 80 percent of American almonds are grown in California, which is already stricken by drought, that's not good news for the environment (via University of California San Francisco). 

Even if you're not a tree-hugger, the effects of drought can be bad for your health. The CDC says droughts can hurt air quality, increasing the risk of wildfires and dust storms, which can irritate the lungs, worsen chronic respiratory issues, and increase the risk of bronchitis and pneumonia. If you don't have a strong preference for milk substitutes, Datawrapper suggests that soy milk and oat milk are your best bets. And at least drinkers can know, almond milk is an environmental improvement over cow's milk.
